Can I give them 6 stars?! I LOVE the Land & Water Company. Chef Rob Ruiz is taking responsible food/seafood - organic and sustainable - to a whole new level. And everything I've tried there is seriously delicious! Start with a Grand Piano or Basil Smash to drink. Appetizer must trys include the crispy beef skewers, the spicy tuna musubi, and you CAN'T leave without trying the bacon lardon. I dream about their bacon lardon. You can't go wrong with sushi or a dish and the menu sometimes changes with the seasons. For something different try the all veggie and quinoa green roll complete with kale chips or the chicken & waffle sandwich, which puts a spin on this already delicious dish. And try the Modernist Sunday for dessert. It's a perfect combo of cinnamon, Spanish peanut ice cream, crisp waffle, ancho scented chocolate, hibiscus cherry, and candied kumquat. You'll leave there agreeing wth me that Chef Ruiz is brilliant.

If you enjoy Asian fusion & strong cocktails (I mean who doesn't?), you absolutely have to check this place out. Not only is the food delicious, you can tell the chef puts a lot of thought in the details. My favorites include the 5 hour braised beef skewers and the okonomiyaki (seafood kimchi pancake, yaas).

Sensational sushi in the heart of Carlsbad! Chef Rob Ruiz was penniless and destitute in Hawaii when he decided to turn his life around and become a restauranteur. Through sheer determination and passion he worked his way up from nothing to opening a preeminent restaurant in Carlsbad, Land & Water Company. Yet his impressive accomplishments are not stopping with his signature restaurant. Rob is working with scientists on a national level to ensure that all seafood purchased in the United States is sustainable and tracked to the source. In 2012, Rob invented edible QR codes that customers can scan into smart phones to retrieve data on the seafood they consume.

And speaking of which, the food at Land & Water is organic, fresh and outstanding. The Green Roll is an inventive California twist on sushi with quinoa, enoki mushrooms, house pickles, Haas avocado and kale chips wrapped in steamed swiss chard then topped with a mirin vinaigrette. The house Moscow Mules made with Batch Craft Ginger Beer are also exceptional.

What a fabulous seafood restaurant in Carlsbad - fresh, authentic, and actually sustainable! It's trendy, fitting with the Village (it's housed inside an old blue Victorian mansion on the corner), and the interior is chic and eclectic. But the food and drink here is the shining star - obviously. I came for happy hour and had a cocktail called Mon Cheri (gin, grapefruit and lemon) and then a classic Moscow Mule -- both were on par. We all split several small plates: crispy jidori chicken with Japanese mayo, lemon and rock salt; 5-hour braised beef skewers with horseradish mayo; and the piece de resistance: Bacon lardon, which is crispy pork belly, Jalapeno cornbread, stone cold crab salad, and orange marmalade. Everything was exquisite, and I had no complaints - even down to the housemade seasoned potato chips.

What a gorgeous location!! Not just outside but inside too! So much history here! Oh be try the Kentucky Buck and Beef Misubi! Pretty sure that projector screen is for football!!

The building where Land & Water Co. resides has been through many different stages of it’s life. If you are a Carlsbad resident, you know which building I’m talking about. It’s the big blue “house” at the corner of Carlsbad Village Drive and Coast Highway 101, formerly Ocean House, formerly Neimans. They are long gone, but won’t be missed by me anymore. It has now been returned to its roots thanks to Robert Ruiz and Joshua Helmle. “The former ‘Duke Room’, named in honor of John Wayne who frequented the restaurant, has been restored to reveal the original vaulted ceiling with hand crafted painted beams and the original stained glass window installed after the final addition to the home. Today, the Land & Water Co, which pays tribute to its origins, brings extremely unique California with French, Hawaiian and Japanese influences to North County San Diego.”

I stopped in yesterday to get some information about the newest spot in Carlsbad and was blown away with what Robert and Joshua have done with the place. Not only that, but the staff was warm, professional, and seemed to be truly passionate about every detail of the venue. After speaking with Chef Ruiz for mere minutes, it was clear to me his passion for his community as well as the quality of the food he serves. Every fish is line caught, not frozen or prepackaged, brought up to him daily for him to prepare for his guests. All of the food and specialty drinks are well thought out to bring you the best quality when dining out.
